IMO, they are all about the same and all changing almost daily. I'd say pick one and go with it and you'll be fine. One will move ahead of the other and then get surpassed the next week. We use copilot(GPT) at work and have agents that are basically doing what you're talking about now(Reviewing legal paperwork). Ours are more around loan documentation(which are sometimes 100+ pages and none of them are the same format), and GPT does it just fine. It's all about getting the prompt right and having someone that's competent enough to work with it and tweak it(AI assisted of course).
